Belize
We flew into Belize City and then took a puddle jumper to Ambergris Caye- smallest airport we had ever seen. Grabbed a cab to our place for the week, Xanadu, a small resort on the beach with several 4 unit, stand alone rooms, a pool and a dock that extends into the water. Our accommodations included one big room with a full kitchen, small sitting area, king size bed, large closet with a safe and a separate bathroom. We had a ground floor room with a quiet outdoor area that included a table and chairs and a hammock. We were steps from the pool and just a few steps more to the beach. The beach had an “iron shore” but the dock made getting into the water easy. There is a quaint little bakery next door that was run by a couple from Ireland that were living on their boat.
We frequented the bakery for breakfast pastries- to die for cinnamon buns, as well as lunch sandwiches and pizzas. A grocery store was located across the street from the bakery where we grabbed some staples for breakfast. We enjoy breakfast at our place on our patio; and that way we also didn’t have to get dressed to go grab breakfast. There was a grill on the beach at Xanadu that we took advantage of one night to grill our dinner and eat it while looking at the beautiful ocean.
We were able to walk the beach to San Pedro, the main “city” on the island. There are several bars and restaurants on the walk to San Pedro and several more once in town. We ate lunch and dinners at the many waterfront restaurants- some out on piers in the water restaurants. Can’t say enough good things about the food on the island. Fresh fruit, fish done to perfection every time, vegetables rice and beans. Perfect!
The main mode of transportation on the island is golf carts. We however did not rent a golf cart and walked everywhere. One evening while walking home from town, a sweet older couple in a golf cart approached us and asked if we wanted a ride back to our place. They didn’t even ask where we were staying. It was a bit odd at first, but we excepted and talked to them on our “commute” back to Xanadu. She was a retired school teacher who then opened up a restaurant and he was a carpenter who actually made the cabinets for Xanadu! They are “semi-retired” now. This sums up the kindness of the locals on Ambergris Caye.
Since this vacation was before we got certified to dive, we spent a lot of time relaxing on the beach, enjoying cocktails and snorkeling. We went on a snorkeling trip to Shark Ray Alley as well as another spot on the reef. Astonishing amounts of fish on the reef and a bunch of nurse sharks and sting rays. The water was crystal clear and visibility was amazing.
We also ventured to the main land one day. A puddle jumper took us to Belize City municipal airport; this air port was even smaller than Ambergris Caye airport. I got to sit in the co-pilots seat; fantastic views from the front! Sitting in the front of the airplane made the runway look like a driveway 5 feet from the sea!! crazy!
We had a guide drive us and another couple across Belize to ruins called Xunantunich, right on the border of Belize and Guatemala. We were the only ones visiting that morning. We got a feel for how big they actually are. We climbed to the top of the temple, wandered through the rooms and around both sides and up steep steps until we reach the top. You could see for miles.
These incredible places were built with no machinery. The guide took us, to what I believe was his parents home, for a traditional Belizean chicken lunch; it was absolutely fabulous we were also provided rum punches which for quite yummy. After lunch we went to a cave tube- sitting in inner tubes while drifting through caves. We had to hike through the jungle to get to the entrance of the cave. Our guide showed us all kinds of new things along the way including ant eaters, wild pineapples, crazy male and female trees. We came across a huge termite nest and he explained what a good source of protein they are and that they tasted like mint. So I tried them! Yes live termites! And yes, they did taste like mint.
The cave was amazing. Parts of the caves were open to outside and other parts were completely dark. We saw stalactites, stalagmites and of course some bats. On the ride back to the airport we stopped and picked a cashew fruit. Cashew fruit is where the nut comes from. It’s a bazaar fruit, shaped like a pear, very juicy but make your mouth very dry afterwards. Rebecca got to ride in the co-pilot seat on the way back to Ambergris. She was scanning the plane dash and pointing out the alarms that were up on the panel. Not saying she’s a control freak at all!!
Back at Xanadu we tipped the cab driver and went back to our room exhausted. I wanted to look at the pictures I had taken that day; however, when I went to grab my camera bag which included my camera and lenses, I realized I left it in the cab! In panic mode, I ran to the road and to my surprise the cab was still there waiting for me to grab my bag! Says a lot about the people on the island.
